i make tandoori chicken the following method:
i marinate the for atleast 4 hrs or even overnight. i poke the chicken thoroughly with the fork, mix the paste of ginger, garlic paste, pepper, saunf, clove, red chillies, lime, salt, jeera,turmeric pdr.
preheat the oven for 450f then grease the tray keep the pieces and cook for 20-25 mts. i toss the chicken pieces in between. once the chicken is done, i test with the fork if it reaches the bone or whole meat smooth, brush the pieces with the oil and broil for 5 mts. the chicken is very juicy and delicious. but it does not come out like the ones at restaurant. where is the mistake?
i dont add food color, i dont add corn flour or egg as binding agent. if i add egg, the dish has to be finished the meal as the egg smell is more. i dont add corn flour becoz i hv a doubt if it would burn out at the temp in the oven. i add corn flour when i deep fry.
can you tell me where i go wrong?
